Dandelion Greens Recipe

Dandelion greens have a slightly bitter flavor, and can be prepared in many different ways to make use of their healthy detox properties.

A good way to downplay the bitter flavor of dandelion leaves is to mix them into a salad, where they add a wonderful color to the mixture.


The bitter flavor can take a little getting used to, but do give it a try. You’ll love including the wonderful detox properties into your everyday meals. It can’t hurt to eat a few of those pesky dandelions out of your lawn either. If they multiply…just eat more! Good for your liver, good for you!

Here’s a delicious recipe for sautéed dandelion leaves. Tasty, and oh so good for you. If you want the detox effect of the greens but can’t tolerate the bitter taste, try using half as much dandelion and half spinach. Still healthy, just not so bitter.

Sauteed Dandelion Greens

Ingredients:

  • A “mess” of dandelion leaves (a nice big bowlful)
  • Half a medium onion
  • One or two cloves of garlic
  • 1 Tbsp. Olive oil
  • ¼ cup cooking wine

Preparation:

Wash the dandelion leaves and let drain. Chop the onion and garlic. Heat the olive oil in a large pan, and add the onions and garlic, sautéing until onions are translucent. Add the greens and continue to sauté for about 20 minutes, or until tender. Then enjoy with any meal, or by themselves.

Note: My husband says to use bacon grease for the oil in this recipe, but the preservatives used in curing bacon make it a definite no-no in my book. It’s counterproductive to take such a fine detox vegetable like dandelions and ruin the detox effect with bacon grease.

It’s possible to find organic bacon minus the nitrites, however, so if you must use bacon you should by all means go the extra step to get the healthiest variety you can find.
